Sugar, sugar, sugar. That’s what I usually think of when I see holiday baking. Treats around the office water cooler? A little brownie here, a chocolate chip cookie there… the temptations abound! And so, I present to you, the energy ball. The fundamental ingredients are the same, but with a little creativity, you can adapt and make your own personal recipes! The best part? They are tasty, full of nutrients, and your waistline will thank you! Oh! And they’re no bake! Yes!! That means with just a few minutes of prep time, they are indulgent ready 🙂
Have I mentioned they also pack well for long haul flights? Try them out!
The energy ball basics:
1 cup oats
1/4 cup honey
1/4 cup peanut butter (my favourite is coconut peanut butter – find it at your local farmer’s market, or substitute any other nut butter)
1/4 cup shredded coconut
Optional fun ingredients (play with your favourites):
1 tbsp vanilla protein powder
1 tsp vanilla
1 tsp maca
melted cacao nibs to drizzle or dip
Mix everything together in a large bowl and form into balls. Place the balls on a plate or tray and drizzle with melted chocolate (or dip them).
Enjoy! Let me know if you have favourite energy ball ingredients. It’s so easy to get creative with these and are the perfect snack for home, work, or traveling.
